Sturgeon are the largest freshwater fish in North America. During August and September anglers catch them below the Jim Woodruff Dam at Chattahoochee, Florida. Most are six feet long and average 100 pounds, however the species attains a weight of 1,000 pounds. Caviar is made from the roe ; the meat is considered a delicacy."
